Many people are surprised how much different (and usually better) a wine can taste at a tasting, than when they open the bottle at home. Most times, it's because the wine merchant goes to lengths to serve wine at the perfect temperature.
Sparkling wines are best at around 5ºC, whereas dry whites are better at around 9ºC. White wines tend to have higher residual sugar content and are usually served chilled to counteract the sweetness, so that the other more delicate flavours aren't swamped by it.
Reds, which are usually dry, need a warmer temperature to release the lovely bouquet and flavours that have developed during their storage. So a full bloodied Spanish red or Burgundy is best served at around 15ºC and a lighter claret at 22ºC.
